The new generation of the family Contini Bonacossi presents "The Vinsantaia", a local wine bar inside the historic Capezzana wine bar, today rearranged to accommodate those who want to taste our wines, taste local dishes carefully selected by us and enjoy our beautiful countryside. The place is named after our famous Vinsanto Capezzana, resting for five years in the casks to age kept in the rooms on the upper floor of the restaurant. The Vinsantaia is at the center of the ancient village of Capezzana, in front of the olive mill. From here, immersed in the Tuscan landscape of vineyards and olive groves, you can enjoy a unique view on the hills of Carmignano and the plain of Florence, Prato and Pistoia. This space was open to welcome those who want to come to immerse themselves in our reality, an ancient wine and olive oil company, for more than 1,200 years. We will be happy to take you on a visit to the cellars and taste our wines. We selected meats and cheeses to pair with our wines, and if you're lucky, you will also find first fruits from our organic garden. The bread is homemade, as well as biscuits and schiacciate. The idea comes from the family passion for this place and the desire to revive the area's resources, making available to all its excellence: wine, oil, landscapes and more. From 2014 we inaugurated a series of events with Chefs from all over the world that will aim to bring, with their perspective, our culinary culture with the best local ingredients on your dishes.

Our cuisine is based on highliting the raw material, be it precious or poor, and on discovering new notes of traditional flavours.

 

To fulfill this need, we created the concept of "open kitchen", called Chef Week. Opening our doors to Chefs with different cultures and backgrounds, bonded by the love for our products, the Vinsanta's kitchen aims to give new experiences on the culinary panorama, bringing on the dishes an evolution of all the values of our  tuscan cuisine.
