CARABACCIA
Ingredients ( serves 4)
- 1 kg of red onions
- a celery rib
- 2 carrots
- tuscan bread
- stock
- 100 gr. of extra virgin olive oil
- 50 gr of grated parmigiano cheese
- salt
- black pepper
Chop thinly the onions, carrots, the celery and fry slightly in a pan with oil. After approximately half an hour add the stock, salt and pepper and cook for 30 minutes.
Serve on the roasted bread with abundant grated cheese.
