CARABACCIA

Ingredients ( serves 4)

  • 1 kg of red onions
  • a celery rib
  • 2 carrots
  • tuscan bread
  • stock
  • 100 gr. of extra virgin olive oil
  • 50 gr of grated parmigiano cheese
  • salt
  • black pepper

 

Chop thinly the onions, carrots, the celery and fry slightly in a pan with oil. After approximately half an hour add the stock, salt and pepper and cook for 30 minutes.
Serve on the roasted bread with abundant grated cheese.
