"ALLA FIORENTINA" PORK

Ingredients (serve 4)

  • 800 gr of lombata
  • 3 cloves of garlic
  • 5 leaves of sage
  • 2 branches of rosemary
  • a glass of white wine
  • salt
  • pepper
  • extra virgin olive oil

Mince a clove of garlic, a branch of rosemary, the sage and add salt and pepper. Take away the bones from the LOMBATA and strew with a part of the mixture prepared before. Carve in different places the meats and fill the hole with the mixture, garlic and rosemary.
Cook in oven; after 30 minutes add the white wine and cook for 45 minutes.
